Fruity Mancakes

Ok, these may not sound amazing but don’t doubt me yet....

Here’s the thing – they’re so versatile! You can add more or less oats…you can do just eggs, just egg whites or a combo of egg and egg whites…all depending on your own preferences and goals! 
I’ll share with you the 21-day fix/Insanity Max: 30 approved recipe I use along with my husband’s.
WHAT YOU NEED
Her recipe (21 day fix approved) – Yields 4-5 pancakes
  • 1/4 cup quick oats – 1 Yellow
  • 4 Egg whites – 1/2 Red
  • 1/2 cup berries or 1/4 of a banana – 1/2 Purple
  • 1 tsp. vanilla
  • 1 tsp. cinnamon
His recipe – Yields 12 pancakes
  • 1.5 cups oats
  • 6 Egg whites
  • 1 Egg
  • 1 banana or 1 cup berries
  • 1 tsp. vanilla
  • 1 tsp. cinnamon
WHAT YOU NEED TO DO:
  • Preheat pan to medium heat.
  • Combine the Egg/Egg whites, oats, vanilla and cinnamon. You can do this in a bowl if you want to leave the oats ‘whole’ or in a blender if you like a smoother, more pancake-like consistency. Stir or pulse a few times to combine.


  • Add fruit and pulse until you get the desired consistency you like!
  • Using a 1/4 cup, pour into pan, cooking each side about 2 minutes or until you see the edges forming. Flip once. Let cool and store in air tight container or eat immediately!

The one thing I LOVE about these is that you can eat them hot or cold, in the car, or running around – which fits my lifestyle perfectly!!! 
Honestly though – you can’t go wrong! They’re so tasty!

Hammer & Chisel: Month 1

It has arrived! 
I have OFFICIALLY finished month 1 of Hammer & Chisel!


I think I found another soulmate workout! It reminds me a lot of Body Beast, which Sagi, is a trainer in this program as well.

I had originally started Hammer and Chisel when it was released and was able to stream it through Beachbody On Demand, before I received my copy in the mail. Cool, Right?

These workouts are NO joke. They are hard. I have tested my limits. This is the FIRST program I have gone full force since having my son. 

The one thing that has gotten me through this program is my accountability group & success partner. If it was not for them, there is no way I could've succeed this far. 
                                               
 I was cranking these workouts out, but not getting anywhere. WHY?  Because I was NOT following the nutrition part of the program. It makes a HUGE difference. This time around, I have been meal planning weekly, prepping, and sticking to my plan. My body feels a lot better and also cleaner, crazy to think.

I tell others all the time, the trainers create these programs for a reason. There is a reason why the schedule & nutrition guides are the way they are. THEY WORK.

I can not stress enough how important it is to plan with this program and other Beachbody programs.

One thing is a must is Shakeology. Easiest meal of the day & the healthiest meal of the day.




One thing that has saved my throughout this program this far. My secret sauce! E & E pushes me. It gets me going on those early mornings. It gets my mind focused. Could not survive without it.

Chicken Quesadillas

I have been doing so well with mixing up our dinners & trying out new recipes. I have been CRAVING quesadillas for the past week and had to find a good, but different recipe that we haven't tried before.

This is a QUICK and easy recipe. Remember, I am not the best chef so this was perfect for us. 

Loaded with approximately 37 grams of protein and 16 grams of fiber, these Quesadillas are delicious!

Ingredients:
16 oz skinless chicken breast
cumin
oregano
garlic powder
salt and fresh pepper
cooking spray
1/2 small onion, cut into strips
1 bell pepper (red or green) cut into strips
1 clove minced garlic
1 tbsp. oil
1-1/3 cup Weight Watchers Mexican blend shredded cheese
1 cup avocado-mango salsa
8 low-carb whole wheat tortillas
Directions:
1. Slice chicken breast in half so you have 4 cutlets.  Season chicken generously with salt, pepper, cumin, oregano, and garlic powder.
2. Lightly spray skillet on medium heat with oil and cook chicken until cooked on both sides.
3. Remove from  heat and cut chicken into strips (set aside).
4. To the skillet, add 1 tbsp. oil and cook onions and peppers, season with salt and pepper.
5. Cook about 2 minutes, add garlic and continue cooking until vegetables are soft (be careful not to burn the garlic!).
6. Heat another skillet on medium heat and lightly spray with oil.  
7. Add tortilla, top with cheese, chicken, onions, peppers, and pico de gallo or avocado-mango salsa.
8. Top with the other tortilla.  Cheese should be melted and the bottom of the tortilla should be golden brown.  
9.  Put a plate on top of the quesadilla to flip it over onto the plate. Then slide the other side onto the skillet.  Cook another minute and remove with a spatula.  
10. Cut into wedges and enjoy!
