Zesty Grilled Chicken



 
 
 
Ingredients:
6-8 Boneless, skinless chicken breasts
1.5 tsp Weber Grill Seasoning - Chicago Steak (I know what you're thinking...steak seasoning on chicken?  Trust me, it's delicious!)




Directions:
1. Combine chicken breasts, ACV, garlic, Chicago Steak seasoning in a large Ziploc bag and shake until ingredients are evenly mixed and seasonings are coating all chicken breasts. Marinating in a pan works just as well.  Shake bag or turn chicken after a couple of hours for best results.  Let marinate for at least 6 hours.





2. On an indoor grill, cook on high heat for about 10 minutes in the closed position or about 5-7 minutes per side.  On a large outdoor grill, cook on medium-high for about 7 minutes per side or until chicken is 165 degrees Fahrenheit.

Dreading your workout? Here are 3 ways to get motivated.

1. Check in with your favorite health hero
When I’m not in the mood to work out, I check out Chalene Johnson's instagram for a little inspiration. Reading about someone else’s motivation and successes always seems to get me moving. Plus, I usually end up finding a new workout routine, recipe, or piece of advice that further inspires me to get my sweat on!




2.Create a game plan for your workout
If I don’t start my workout with a game plan, I lose focus and inevitably don’t get the best results. Let’s just say, there has been more than one occasion when I’ve wandered aimlessly around the gym and made half-hearted attempts at exercising. Now, I make sure to plan exactly what I’m going to do during my workout– whether it’s a 30-minute interval run  on the treadmill or a Full body cross fit inspired workout– so I have a plan of attack, which helps me stay focused and motivated throughout my workout.

3.Listen to your playlist before you start your workout
Music is a great way to pump me up for a sweat session, but I sometimes find that I have trouble even starting my workout. The solution: Playing upbeat tunes (I love dance music) before I start working out. The music gives me a boost and helps me power through my workout!

Pumpkin Pie Shakeology

This is my ABSOLUTE favorite Shakeology recipe. I don't like coffee so I don't get the joys of going to Starbucks for a Pumpkin Spice Coffee. This is my coffee. I hope you enjoy this as much as I do.



Ingredients:
1 cup Almond Milk
1 Scoop Chocolate Shakeology
1/2 TSP Cinnamon
1/2 TSP Nutmeg
1/2 cup Unsweetened Canned Pumpkin
Ice

Put all the ingredients in the blender and BLEND.

Crock Pot Ziti

Ingredients
 
•1 (1 lb. 7.8 oz.) jar marinara (no sugar added) look for sauce with the fewest ingredients.
•3 cups penne shells (whole grain, dry)
•2 cups fat free cottage cheese
•2 cups skim mozzarella cheese, shredded
•1 large zucchini (1/4” slices)
•1 tablespoon fresh oregano (finely chopped)
•1 tablespoon fresh basil (finely chopped)
•1/4 teaspoon black pepper

Directions
1.In a large mixing bowl combine cottage cheese, mozzarella, oregano, basil and black pepper. In the Crock Pot, spoon 1/4 of marinara onto the bottom, add 1 cup penne shells, 1/3 of zucchini slices and top with 1 cup cheese mixture. Repeat until you have 3 layers. Top off with the remaining marinara and lastly, cheese.


2.Note: Keep penne shells and cheese away from the edges by about 1”. Pasta tends to get hard and cheese burns if allowed to touch the sides while cooking.

3.Cover and cook on low for approximately 2 hours or until penne noodles are Al Dente (firm but not hard). Not all crock pots cook the same so be sure that the penne is done before serving. The cook time is recommended based on the crock pot used when preparing this recipe. Allow to cool for 15 minutes before serving.

4.Tip: If you prefer your ziti a little more on the thick side, allow to cook an additional 30 minutes to 1 hour.


5.  I added chicken to this meal by boiling 4 chicken breasts until just cooked and then cutting up into chunks and layering with the pasta.  That way I got my serving of protein.

Week 5: Turbo fire & meal plan Update


As another week has come and gone, I have my meal plan sitting on my fridge ready to go.  I tried two new recipes this week. A goal of mine is to try at least on new recipe each week.  That is why meal planning is so important.  I know some people think I'm crazy when they see how planned out my weeks are as far as food, but it saves me so much time throughout the week when I do this!  I don't have to worry about standing in front of the open pantry or refrigerator wondering what it is I want to eat.  That is when you make those bad choices!  For me, I prepare and portion all of my snacks, clean my fruit, cup up my veggies, and have everything at eye level in the refrigerator and/or pantry.  Why?  Well because things at eye level are more than likely to be "grabbed" when you are hungry and in a rush to eat.  Another reason why is because even though I eat as clean as I can, there are still food choices in my house that I know I shouldn't eat.  They aren't terrible, just some snacks for my husband

 

So, here is my meal plan from the past week!  At no point throughout the week did I guess on what I want to snack on, or what I want to make for dinner.  EVERYONE eats the same dinner at my house.  I started planning out my meals this summer.  It took me a little longer at first (maybe 45 minutes); however, now that I have a collection of recipes and snacks that I like to eat, the process only takes about 15 to 20 minutes each week.  I'm a creature of habit and do like to eat similar things each day, plus, it saves me some money because I can buy in bulk. 

 

 That is actually a question that I get quite frequently..."Isn't it expensive to eat that way?" My answer, NO!  In fact, we have saved money on our weekly groceries!  I'm not buying a lot of processed food and I'm flavoring my dinners with herbs and spices.  In addition, I'm pre-portioning out my snacks, so, a bag of almonds actually lasts me quite a while now!

 

 

  As for the best part of my meal plan, Shakeology of course!  I love that I have a meal that is not only delicious, but that is quick to make, healthy to drink, and gives me my energy and curbed cravings that I need throughout the day.  A recent survey has been released about Shakeology.  This shows just how effective Shakeology is.  It is not filled with hidden ingredients and additives.  It is an all natural shake that you can consciously drink, knowing that it is providing you with your daily dose of nutrients.

 Ok on to my TurboFire update.  So, I absolutely LOVE TurboFire. I can’t believe I am already done with week 5 with Chalene. This is my first workout with Chalene and couldn’t be happier with it. TurboFire is more of a dancing type, high intensity workout. She makes it fun and the workout goes quick.

EAT. DRINK. BE SKINNY THIS HOLIDAY SEASON

As the holidays are coming and going, so are the family gatherings. No one really minds what they are eating throughout this crazy, busy holiday season. With this being my FIRST holiday as a CLEAN EATER, I have struggled the past years with over eating and feeling miserable the next day. I am so looking forward to not feeling like that this year.

In return for feeling miserable after Thanksgiving, I have put together a Holiday Clean Eating & Shakeology Challenge. Sirloin Beef Wraps

I got this recipe from another coach. We had this for dinner last night and it was amazing!! We mainly eat chicken dishes at home so this was great to mix it up.
 
 
Serves: 4
Prep Time: 6 Minutes
Total Time: 23 minutes
 
Ingredients:
  • 12 oz boneless sirloin steak, trimmed of visible fat
  • 1 Tbsp balsamic vinegar
  • 1 tsp safflower oil
  • 4 Whole-Wheat Tortillas
  • 3 cups shredded romaine lettuce
  • 1/2 cup thinly sliced carrots2 oz thinly sliced red onion (about 1 medium red onion)
  • 1/2 medium cucumber, peeled and thinly sliced
  • 1/4 to 1/2 packed cup chopped cilantro leaves
 
Sauce:
  • 3 Tbsp Dijon mustard
  • 4 tsp raw honey
  • 1 packet stevia
  • 1 tsp balsamic vinegar
  • 1/2 to 3/4 tsp red pepper flakes
 
Directions:
  1. Place steak on a dinner plate, spoon 1 tbsp. vinegar over top and turn several times to coat.  Let stand 10 minutes.
  2. Meanwhile, prepare sauce: In a small bowl, whish together all sauce ingredients and set aside.
  3. Heat oil in a large nonstick skillet on medium-high heat.  Tilt skillet to coat bottom lightly.  Cook steak for 4 minutes per side or to desired doneness (you can also grill the steak).  Place on a cutting board and let stand for 5 minutes before thinly slicing.
  4. Warm tortillas according to package directions.  Top each tortilla with equal amounts of lettuce, carrots, onion and cucumber.  Divide stead among tortillas and sprinkle with cilantro.  Spoon sauce over top, diving evenlin.  Wrap to serve as a sandwich or serve open-faced.
