Chicken Quesadillas

I have been doing so well with mixing up our dinners & trying out new recipes. I have been CRAVING quesadillas for the past week and had to find a good, but different recipe that we haven't tried before.

This is a QUICK and easy recipe. Remember, I am not the best chef so this was perfect for us. 

Loaded with approximately 37 grams of protein and 16 grams of fiber, these Quesadillas are delicious!

Ingredients:
16 oz skinless chicken breast
cumin
oregano
garlic powder
salt and fresh pepper
cooking spray
1/2 small onion, cut into strips
1 bell pepper (red or green) cut into strips
1 clove minced garlic
1 tbsp. oil
1-1/3 cup Weight Watchers Mexican blend shredded cheese
1 cup avocado-mango salsa
8 low-carb whole wheat tortillas
Directions:
1. Slice chicken breast in half so you have 4 cutlets.  Season chicken generously with salt, pepper, cumin, oregano, and garlic powder.
2. Lightly spray skillet on medium heat with oil and cook chicken until cooked on both sides.
3. Remove from  heat and cut chicken into strips (set aside).
4. To the skillet, add 1 tbsp. oil and cook onions and peppers, season with salt and pepper.
5. Cook about 2 minutes, add garlic and continue cooking until vegetables are soft (be careful not to burn the garlic!).
6. Heat another skillet on medium heat and lightly spray with oil.  
7. Add tortilla, top with cheese, chicken, onions, peppers, and pico de gallo or avocado-mango salsa.
8. Top with the other tortilla.  Cheese should be melted and the bottom of the tortilla should be golden brown.  
9.  Put a plate on top of the quesadilla to flip it over onto the plate. Then slide the other side onto the skillet.  Cook another minute and remove with a spatula.  
10. Cut into wedges and enjoy!

Oven Baked Chicken Fajitas

As I say about everything I have blogged on recipes, this was AMAZING. I am normally not a fajitas person, so I thought I would step out and try this. This was a hit with my husband as well. MUST TRY.
 
 
 
 
Ingredients
•1 pound boneless, skinless chicken breasts, cut into strips
•2 Tbsp vegetable oil
•2 tsp chili powder
•2 tsp cumin
•½ tsp garlic powder
•½ tsp dried oregano
•¼ tsp salt
•1 (15 oz) can diced tomatoes with green chilies
•1 medium onion, sliced
•1 large bell pepper, seeded and sliced (I use half a green and half a red)
•12 flour tortillas
•Toppings such as cheese, sour cream, and guacamole – if desired
 
 
 
 
 
Instructions
1.Preheat the oven to 400 degrees. Place chicken strips in a greased 13×9 baking dish.
2.In a small bowl combine the oil, chili powder, cumin, garlic powder, dried oregano, and salt
3.Drizzle the spice mixture over the chicken and stir to coat.
4.Next add the tomatoes, peppers, and onions to the dish and stir to combine.
5.Bake uncovered for 20-25 minutes or until chicken is cooked through and the vegetables are tender. Serve on tortillas with desired toppings.

Clean Eating Turkey Taco Casserole

As you know by now, I am getting the hang of cooking. I got this recipe from my coaches' page. It was AMAZING!!! I LOVE Mexican so this hit the spot. Didn't take long at all. I hope you enjoy this just as much as I just did.

Ingredients:
1 lbs lean ground turkey, browned and drained.
1 small onion diced
1 small taco seasoning packet
8 oz jar of taco sauce
2 roma tomatoes diced
iceberg lettuce chopped
Plain Greek Yogurt (we like the Kirkland brand)
Low fat Cheddar Cheese (omit if you are stripping down your own meal plan)
Whole Grain Tortilla Shells (Hard ones)
 
 

Directions:
Brown turkey and onion in a pan over medium high heat.
Drain off the liquid and add taco seasoning packet with 1/4 c water.
 
Stir until combined.  Then add taco sauce and stir.
Layer a baking dish with crunched up taco shells
Then put a layer of ground meat, thin layer of greek yogurt, tiny bit of cheddar cheese (emphasize TINY), then layer with shells, ground meat, greek yogurt and cheddar cheese on top.
 

Heat in 350 Degree oven for 15 minutes.
